I Tried Beyoncé's Vegan Meal Plan. Here's How It Went.

In February this year, Beyoncé partnered with her trainer, Marco Borges, to create an organic, vegan, gluten-free, soy-free meal delivery service called 22 Days Nutrition. Beyoncé and Jay-Z went vegan for 22 days in December of 2013 with the help of Borges and both became enthusiastic supporters of the challenge. Thus, she went into business with her trainer to help other people feel as magical as she does. Sounds great, right?

Well, if it's good enough for Bey, it's good enough for me. Would I become closer to her if I tried the meal plan? Would I truly feel flawless? I decided to give her vegan meal plan a shot for 48 hours. Here's how it went.

About the 22 Days Nutrition Meal Plan

The idea behind 22 Days Nutrition is that it takes 21 days to break a habit. So ideally, on the 22nd day of this meal plan, you will have started to incorporate new habits – like a plant-based diet – into your lifestyle. The meals that 22 Days Nutrition provides are fresh, organic, soy-free, vegan, and gluten-free.

What it's Like to Eat Like Beyoncé for 48 Hours

Day 1

Breakfast: Banana-Walnut Breakfast Muffin

When I got into the office at 9 a.m. I slowly worked my way through these two banana-walnut breakfast muffins. These had a good banana taste, but were on the drier side. Not a lot of flavor. I usually have yogurt or a green smoothie for breakfast – so this felt like work to get through. I was really, really full after eating these muffins.

Beyoncé-Meter: I didn't really feel like Beyoncé after eating the muffins, but maybe that's because I didn't get a lot of sleep the night before.

Lunch: White Beans & Greens Salad

I normally start thinking about lunch around 12:30 p.m., but I wasn't hungry in the slightest. I waited until 1:45 p.m. to eat lunch, even though I had no desire to do so. The meal was chock-full of great things: white beans, walnuts, carrots, and greens.

It felt like work eating this lunch because of the amount of fiber. It took me about an hour to finish and I was stuffed. It didn't taste like much, but it didn't taste bad either. There was no way I was going to eat any of the office snacks that were left out in the kitchen.

Dinner: Creamy Elbow Pasta with Portobello Mushroom

I went to the gym after work, and didn't get home till about 9 p.m. Even after working out, I wasn't hungry at all – something was not normal. I heated the elbow pasta up on the stove and picked at the meal until it was all gone. I wish there had been more vegetables in the pasta, but again – it didn't taste too bad. I felt good after the meal – I wasn't full, but I definitely didn't want to eat anymore.

Day 2

Breakfast: Cinnamon Date Oatmeal

At around 10 a.m., not hungry in the slightest, I stared down this bowl of oatmeal. It tasted a little gummy, but the dates and cinnamon added something pleasant. I couldn't get through half of it, however, because it was just so much food. I'm not used to eating that much in the morning.

Beyoncé-Meter: After breakfast I had this insane surge of energy that lasted until about 6 p.m. This is not normal for me – I rely on good, black coffee to work. It got to the point where I felt I needed to walk around the block or have some tea in order calm down a little bit. What was happening? Does Beyoncé always have this much energy?

Lunch: Creamy Eggplant and Portobello Mushroom Bowl

I saved my favorite meal for lunch that day – and I ate it at around 2 p.m. It was by far the best meal out of the six. It was easier to eat than the rest of the meals, and the eggplant was cooked perfectly. I felt full, but not as full as the previous day.

Dinner: South American Fiesta Lentils

That night I had been invited to go out with friends for dinner who had just moved to New York, but I had to pass because Beyoncé waits for nobody. As they texted me their bowls of pho, I texted them this bowl of lentils. It was fine, but it really needed salt. I ate my meal in peace at around 9 p.m.

I felt incredibly full afterwards, but in a good way.

How Was It?

I like to think I became a little closer to Beyoncé during the short time I tried the vegan meal plan from 22 Days Nutrition. Going into the whole thing, I was skeptical – anything that claims to be plant-based, organic, vegan, and gluten-free makes me feel anxious. I was worried I was going to be hungry the entire time, and I really don't like that feeling. I was so wrong.

The food overall tasted fine, but definitely not great. The muffins were the worst meal, while the creamy eggplant bowl was the best. I'm a salt fiend, so I struggled not to add lots of salt to the lunch and dinner items to make them taste better. Hot sauce would have also helped.

My biggest takeaway in terms of taste was how much I missed having fresh vegetables – all the meals that I received were cooked, nothing was raw. I also really love cheese, so that's also a big problem. I honestly don't think I could give both of those things up for more than a couple days.

That being said, I was truly shocked by how full I was during those 48 hours and how great I felt towards the end of doing the mini meal plan. I had a lot more energy, and noticed a difference in the way my pants fit. Above all else, I realized just how little fiber I have in my current diet, and how a little change can go a long way. You get something like 150% of your daily fiber when you're on the Beyoncé plan and you feel it. It's something I really want to incorporate into my everyday food.
